Wholesale Bulgur Varieties and Export
Bulgur is one of the most deeply rooted products of Anatolian cuisine and, when processed correctly, retains much of its nutritional value. The Toprak Bakliyat bulgur group includes 9 different types, from coarse pilaf grain to fine grind for köfte. Made from durum wheat, our bulgur is processed and packaged at our facilities in Mersin, drawing on production experience that dates back to 1978.
The Nutritional Value of Bulgur
Bulgur is a low-glycaemic grain product rich in fibre, plant protein and B-group vitamins. Because it is made from boiled and dried wheat, its cooking time is short and it keeps its grain structure. These qualities give it a wide range of uses, from pilaf to köfte, from salads to stuffing mixtures.
Grind Types and Uses
Coarse (pilaf) bulgur is ideal for grain-separate pilaf and as a bed for kebabs; medium grinds suit stuffed vegetables, wraps and salads; and fine (köfte) bulgur is perfect for çiğ köfte, lentil köfte and kısır. Each type passes through sieving and de-stoning lines and is packaged under the ISO 22000 standard.

Frequently Asked Questions
The difference is in the grind fineness: pilaf bulgur is coarse-grained and stays separate in pilaf; köfte bulgur is finely ground and used in recipes kneaded by hand such as çiğ köfte and kısır. Medium grinds are preferred for stuffed vegetables and salads.
Quality bulgur is produced from high-protein durum (pasta) wheat. The wheat is boiled, dried, its bran removed and it is ground to the desired fineness; this traditional method preserves the nutritional value.
Our bulgur varieties are sold in 25 kg and 50 kg sacks, 1000 kg big-bags and consumer packs. Private-label packaging is also available for retail chains and importers.
Stored in a cool, dry place in a sealed pack, bulgur keeps its freshness for an average of 18-24 months from the production date. As our packs are moisture-proof, the product can be consumed safely throughout its shelf life.
