Wholesale Dry Bean Varieties and Export
With its high plant protein and fibre content, the dry bean is one of the staple pulses of the table. The Toprak Bakliyat bean group features select varieties classified by grain size and cooking characteristics. Our products are chosen with the sourcing experience we have built since 1978, then sorted, sieved and packaged at our facilities in Mersin.
Quality Classification
In beans, quality is determined by grain size, skin brightness and uniform cooking behaviour. Every lot passes through an optical sorting line; broken, wrinkled and discoloured grains are removed. The resulting homogeneous product is packaged under the ISO 22000 food safety standard in moisture-protective packaging and offers grains that soften evenly during cooking.
Uses
Large-grain varieties hold their shape in olive-oil and meat casseroles, while medium grains are ideal for the classic dry bean dish, pilaki and salads. When soaked in water for 8-10 hours before cooking, beans cook noticeably faster and become easier to digest.

Quality beans have grains of even size with a bright, crack-free skin; when stirred in the hand, the proportion of broken and wrinkled grains is low. Even-sized grains cook in the same time, giving consistency in the dish.
Soaking lets the grain absorb water so it cooks evenly and quickly; it also makes digestion easier, as some gas-forming compounds pass into the water. 8-10 hours of soaking is ideal, and the soaking water should be discarded and the beans cooked in fresh water.
